Heres an idea that you could try VERY carefully. Use the bolts on that adapter to attach a chain. Wrap the chain around a big tree (or some other immovable thing) and hook the other end to your hitch with a clevis. Attach a c-clamp to the connector so that the pin is depressed as previously suggested.
Now drive SLOWLY away from the tree. If you have prepped everything with penetrating oil there is a chance that it will be enough to pop the connector off. Do it really slowly though!
Just a thought ... I'd probably try this carefully before I cut the adapter off.
