I salt and pepper my steaks and let them sit out on the counter for an hour or so before I grill. I use a kosher or sea salt grinder and fresh ground pepper. Normal table salt does not work well for some reason. The salt and room temperature are important to having a juicy steak. I read about how bad it is to put a cold steak on the grill but I don't remember why.
I don't like excessive char on my steak so I don't do anything crazy as far as a sear but I get a nice crust cooking at 400 degrees or so on direct heat. I pull the steaks at 130 degrees and put in a covered container for 5 or 10 minutes until the juices come in.
My favorite cuts are new York strip and ribeye but for the money a tenderloin from Costco is pretty good. For a special occasion I will get dry aged strips from wholefoods.
I posted on another thread about an instant read thermometer. I have a thermapen which is about $75 and if you cook out a lot well worth it.
I also love A1 sauce and I don't think it's a good steak unless I drank some ice cold beer while cooking it.

Thye are REALLY good. My only mod to the recipe you have is I coat them lightly with olive oil before smoking them behind the meat.

I use olive oil on the skins and then put kosher salt on them. The skin is better than the inside! I need to try them in he smoker though

Thanks for the tips everybody. I've gotta go practice practice practice now until I get it right! ;) Guess I've just gotta eat a lot of steak for a while. Oh well....:D

Great thread!

Coworker just got back from an elk hunting trip (successful!), and brought me back some elk steaks for covering some meetings and activities for hiim while he was gone. I can do fine with beef, chicken, pork, vegetables, etc on the grill, but no experience on elk. Wife is kind of iffy, so I gotta make em good. Any good suggestions for the elk?
