we eat so much fish and chicken these days, beef only when T-bones are $6.00 or less a lbs. Then we buy the 3 pack and freeze the other two. But we share a steak and have left overs!
I can agree with the OP, odd how what we think as low cost cuts can be as high or higher than good cuts. Easy example is chicken wings! Really all fat, skin and bone. If we want "buffalo" chicken, my wife cuts boneless chicken thighs in to strips and drowns them in hot sauce.
I grew up on a beef farm, all we ate was beef. For the last 10 years we have been going to our local farmers market and buying wild caught salmon frozen. local store has frozen Red Snapper under $10/lbs. We share a 1 lb pc of fish. Pushing 60 years, we just don't eat so much any more. Ever tried Black Cod?, AKA Sable Fish. At $28/lb we don't have it often, but man o man it sure is good if just baked a real short time and a dash of butter!
