I am so old that I can remember when hamburger was cheaper than steak

And hot dogs were cheaper than each of the above. I don't eat much red meat anymore, but won't have any pork until September so decided to pick a bulk hamburg pack to freeze some burgers. YIKES! The cheap stuff in bulk was 4.99$/lb, London broil steak was 2.59$. I bought the latter of course, froze a couple of pounds and have one on the grill now, along with fresh dug potatoes. :licking:

that's a shame you can't get pork anytime you want, the stores by me all carry pork anytime of the year, it must be something local to you.. as far as hamburgers, I get angus beef, it's great..

You just can't beat moosemeat. So sweet and tender. The only thing I ever made with caribou was jerky. We don't hunt and shoot anymore except with a camera. I have eaten 1# of bacon in the past ten years, mainly because of the high salt content. Sure makes my mouth water when I smell someone else cooking it.

We quit using a meat grinder and now use a Ninja Blender for grinding our meat. We can get exactly the right grind with it. Also, easier to clean and store.

About the only thing which I don't recommend precooking is bacon... having a pound of cooked bacon in the fridg or freezer is like leaving a bowl of M&M's on the counter. :licking.

+1 Um, Um Good! Plus nothing makes quite as good a hamburger as pieces of bacon and cheese in the patties.

It's not that I can't get it, I won't buy it when I have two pigs on the hoof out in my pasture. Things I won't buy; eggs, potatoes, pork, chicken, maple syrup. When I run out of those I'll wait until the next crop is ready.
I get about 20 lbs of bacon from a pig, that has to last me a year.

I remember government cheese. My wife's grandparents were elderly and qualified for free surplus government cheese. I think that was back in the 80's? They'd get several pounds of what looked like a brick of American Cheese a few times per year. We were eating that stuff constantly. :laughing:

It's those four legged animals running around out back that the goberment owns, that = venison!

I do like to add a little ground pork to it though...

I got to the point where I hated the meat from those swamp donkeys so bad, I wouldn't shoot one in season when it was standing in my yard!!

Personally, I much preferred to go out in the temporate rainforest islands, and get the Sitka Black tails, for my main meat supply. I also prefer caribou over moose any day, but I prefer to get the caribou off the Alaska Peninsula.

They are also very good to put in a crock and make "corned" caribou too...

We are fortunate to have a freezer, and buy meat in bulk from this local butcher shop.... check out their prices. See if you can find a butcher shop VS a grocery store.

Pretty much everybody who has eaten moose or caribou has about the same feelings. Now, Sitka Black tail from SE AK are a lot better than the white tail or mule deer we have here. Their only problem - if half a dozen hungry guys sit down - they can eat an entire black tail in one sitting.

Short story - one year we went caribou hunting - mile 36 MacClaren River on the old road in from Paxson lodge - North of Glennallen - Doofy's country. We hit the annual caribou migration thru that area at its peak. Parked - standing next to my pickup - all of a sudden the ground starts shaking and you can hear a rumbling sound getting louder by the second. Thought it was an earth quake - jumped in the pickup for protection. Over the hill about quarter mile distant - here come a gigantic heard of caribou. The lead bulls were straight out of a National Geographic magazine - massive huge antlers.

Never got a single shot but spectacular adventure. Two days later we did get three caribou. Actually - there were so many caribou in the herd - its was so loud - the ground vibrated like a base drum - - it just felt a whole lot safer sitting inside the pickup.
