I have and old set of Henckel knives that are SS and hold an edge like a surgeon's scalpel.
I would say therein lies the difference, I bought the SS for her from Aldi after she put my Dick in the dishwasher (have fun with that!!).
There's good SS and then there's SS that's impossible to sharpen. We've settled the estates of several elders in the last decade and ended up with our share of a lot of kitchenware. For full size carving knives I kept one that sharpens easily when there's a turkey etc to carve, and discarded several that looked as good but just weren't satisfactory. Likewise with the little paring knives my wife loves - but she also uses them to slice sandwiches etc on the Corelle (ceramic) plates so I always re-sharpen one before using it myself. (My wife does 95% of the meal prep, I'm not going to argue with her!) Not all SS is bad for sharpening, just a lot of it.. . . well one could surmise that there is good SS and not so good.

Question. How do you sharpen ceramic knives, I don't have any but curious as I believe they are deadly sharp.
