I've seen that system before. Looks similar, in operation anyway, to the Lansky system. But perhaps safer than the Lansky.

I have had good results with the Lansky. But this system doesn't clamp to the knife like the lansky. This enable you to sharpen any thickness or length of knife. I have even done my butchering axe on it.

There's a piece in the photo that looks like a blade clamp. The piece with the white bumper. After your comment, I took another look and maybe it's just a blade rest? Is that correct?

Well, Billyp, they do look good but loin is way too lean for me in it's simple form. Attached is a pic of what I use a loin for ... 2 quarter loins curing in Morton's TenderQuick and brown sugar and garlic powder. They will get happy for about 3 days, then I'll oak smoke/cook them for 12 hours, then let rest in frig for 3 days. Nuttin' like homemade "ham" for the holidays /forums/images/graemlins/grin.gif

This is not a reply to anyone in particular...

I have the Lansky system and haven't had any luck with my kitchen knives (good Quality). I do believe in letting a professional sharpen them and then maintain the edge with a steel. However, i bought the Lansky after paying two different "professionals" at gun and knife shops for lousy jobs, but have been able to do no better myself. I can keep the knives sharp with a steel for about a year. But with the holiday season, they will get a lot of wear and tear and will nee to be re-edged soon.

Anyone have tips on how to use the Lansky
Anyone live in central TX and have a Tormek

BTW - last time I had them sharpened was by a Tormek someone was touring with at a town fair. It did a fabulous job!!!

Me want Tormek! I watched the videos, and that thing is NICE! The way that knife sliced the paper when he was done sharpening it - woweee.

Funny you should post today. Jeff was in town this weekend at a Woodworking show. There is a lot of interest in his product. Could not even get close to the demonstrations he was putting on. Probably my bad timing. Hope to meet him for coffee sometime in the future. /forums/images/graemlins/cool.gif
