I don’t think you’ll go wrong either way with the transmission choice. Having the extra gears can’t hurt, trying to find that ideal speed while mowing or whatever.
I do a lot of road travel so the 12 was the only way for me.... 40kph (~25mph) top speed is nice on a 10 mile run.
With the road travel pulling the dump trailer I also do some loader work and and a fair bit of slow idling around but the Highway driving must load up things enough the DPF does not regen very often.
I was told by someone the creeper gears are not overly robust and not meant for heavy work?’looking at the shop manual it does not look like a terrible job to install them at a later date yourself if you want them?
I have the 3 rear outlets and use them all at different times.
Does the 8x8 also come with all the adjustability gadgets on the 3pt hitch the same as the 12sp cab model?
I sometimes find the machine is slightly large for what I want to do (in a backyard, in the woods) but that’s More than made up by the lifting and towing capacity that would take twice the trips with a smaller unit. This
M7060 to me is a Swiss Army knife tool, (a 3/4 ton towing and snow plow truck, skid steer, atv, field mower) so I’m happy to have the 12 speed, the cab, the extra rear outlets, and all the other luxury options that I likely don’t notice but would without them! Money well enjoyed more so than well spent but enjoyed makes it well spent. (I bought used and saved 15-20g off list price for a 2 year old machine with 250hrs)
