Should have left them on the vine. Pull plants from the ground, shake off excess dirt and hang the entire plant upside down in a shed or garage. Fresh slice tomatoes thru January. Don't know why but it works.

Ok. I hear you. Next year... BUT... I have no garage, I have no shed with eny kind of heat, they will still freeze solid at 27 degrees outside (which is what I had on Tuesday).

So I need to bring them into the house? And they were HUGE sprawling plants only held up by the massive tomato cages.

I LOVE this idea, I just need to understand it better.

I cannot believe nobody has mentioned my favorite - green tomato pie. Make it almost like an apple pie and it is wonderful! It is always our fall favorite!

Green tomato relish. This time of year apples and green tomatoes are everywhere, so run them through a food processor half and half, add sugar and onion to taste, and freeze or hot pack can. Salsa verde recipes are everywhere. This is the end of the garden season. Pickle anything you can't can or freeze.

Canned green tomatoes make better fried green tomatoes than fresh in my opinion. Must be the vinegar? I don't know but I like it! We have bagged greens and put them up to ripe and some years ate ripe ones in December.
The jars look great with the slices in them. My wife used them as a display some at the market.

We had a customer recommend a book called Wild Fermentation. Has anyone read it?

I have a garden that is way to big for me and my girl and we always have too many tomatoes ,We have used some of the cherry tomatoes by blending them and adding seasoning ,then slow cooked and we end up with some of the best sauce you can imagine !As for the late season greens we pickle them and in the middle of a cold winter they will spice up your day and get you thinking about spring and where you left your rake ! :thumbsup:

Layer the green tomatoes in a cardboard box. Separate the layers with news paper. They will ripen.:thumbsup:
