Hi David, If they are not frost bit I just put them in a closed paper bag, they will ripen just fine that way. If they are frost bit or damaged, fry them up fast:licking:
that will work.
At the end of the season my grandmother would pick all the blemish free green tomatoes. After wrapping them in newspapers she'd stick them in the cool cellar to slowly keep and ripen. Pretty sure they were played out by Christmas. Back in the day when the only alternative were those tennis ball tasting 'hothouse' tomatoes these were the the cats meow.
Now with a world wide economy in play everything is available out of season.
