Definitely go for a cab if you can afford it you will never look back. I bought my tractors for snow removal primarily but also have 50 acres of woodland that I manage with periodic logging.
While I usually just push through the softer limbs and brush, my main skid roads are getting a major facelift as I trim the overhanging limbs that threaten the cab. Slow and steady is always the mantra.

I have not begun pricing different packages out yet, that is the winter project. IF, (big IF) funds allow, where does the Grand-L fall in price with the MX w/ cab?

The cab MX will not be available until April 2020, so no pricing is available.

I will hazard a guess that 50-hp Grand L with cab will be $6,000 to $9,000 more than 50-hp MX with a cab.

That is a GUESS from a good Kubota customer with NO INSIDE INFORMATION.

I'm guessing, and what I was thinking coming into this, is that need to decide if I want smaller tractor with a cab, or more/bigger tractor without.
I was raised in Wisconsin through some brutal winters, scorching summers. I'd rather have more tractor than smaller tractor with cab.

I think you're reading that the wrong way round. Jeff looks to be saying to me that the MX (bigger tractor with cab) will be cheaper than the Grand L (smaller tractor with cab). The Grand L is a luxury model with lots of nice comfort features. The MX is an economy model, so more metal, fewer features.

Neil Messick on his video said he thinks the MX with cab will come in about the same price as the Grand L with cab, but is a bigger tractor with more HP (I think he was comparing the 60HP MX to the 50HP Grand L).

So it may be that the bigger tractor is the cheaper, or at least, same price, tractor. You lose the HST+ transmission, but if you've never had it you can't miss it.

I've seen several threads like this, but knowing each situation is a little different I thought I'd ask for guidance on my situation.

The tasks I see for the tractor:

Mowing clover field and trails with HD Bush Hog, equipped with chain guards, front and rear.

Possibly rear snow blowing attachment for 125 yard driveway.

What else should I be considering?

For your Rotary Cutter tasks you will regularly be PUSHING the mower into thick stuff.

You will be PUSHING a rear snow blower almost all the time.

When PUSHING implements, pin adjustable, telescoping 3-Pt. Hitch Lower Link stablilizers are much superior to chain/turnbuckle stabilizers which are only in tension and supportive when a tractor is moving forward.

MX4800 comes standard with chain stabilizers, pin adjustable, telescoping 3-Pt. Hitch Lower Link stablilizers are optional. Buy optional the pin adjustable, telescoping stabilizers.

You will want either a Land Plane Grading Scraper (LPGS) or a Box Blade for your 125 yard gravel drive.
If your drive is gravel, a LPGS "recovers" gravel. If your drive is dirt and pot-holed a Box Blade may be preferable.

go upper level MX or entry M series i would lean toward 60+ hp M series if spending new for tractor: open station, hyd shuttle

A lot of good advice here, and I just wanted to point out that in springtime a lot of dealers have open houses, which is a good time to get them to knock a little off.
Don't let that limit your thinking, though.

On the buckthorn;if it's the same as we have in Northern NY(invasive species),doesn't get really big(7-9' tall).This looks like a small cherry tree,shiney bark and has a purple berry.It is very deep rooted and tough.In the spring when the ground is soft it can be popped out with enough tractor.I use a L4240/FEL/tooth-bar.
I agree with the cab option and an L4060 or the new cabbed MX.Mx's have larger wheels and tires:less frills.
