You'll be amazed at how resilient dogs can be. Just be patient, work with her and she'll come around.
5 years ago we rescued an abused 1 year old Newfoundland, within 2 weeks she was back to what you would expect - friendly, outgoing, obedient and just an all around joy to be with. She was shy with strangers for awhile and cringed when you went to stroke her head, but that also cleared up with in 4 - 6 weeks.
We were told she was food aggressive, bad with kids, bad with cats, destructive, etc. We know for a fact she caused thousands of dollars in damage to the utility room where she was confined. We were nervous and kept her crated the first night, and that's the last time she was ever in her cage.
About a year later we rescued 2 cats, they think they are dogs, they sleep with her and they often eat out of her dog dish. Our boys were 4 and 5 at the time and 3 of them have been inseparable from day 1. As for being destructive, she has chew toys that are 5 years old.
I'm sure your situation will turn out just as well as ours did.
