Maple Syrup

No industry in the PNW, but small private batches from bigleaf maple or alder. Alder syrup is very tasty, but not well known.

I had no idea. That would be interesting to taste.

Same for birch syrup... I lived in the West Kootenays years ago and there was a guy who produced a small volume from his grove of Paper birch. I once trimmed some birch branches in the spring, and they dripped sap all over my old 65 Chevy 1/2 ton. Moved the truck, but the dripping went on for days. I never thought to collect it at the time...

Once we get our sap house made we plan on doing birch syrup. It normally runs once the maple stops.
