They just quit since there is no tank, no water being stored.
We put in a tankless water heater 5 yrs. ago when we built our house ..just 3 months ago I turned it off and we put in a regular hot water heater. We got tierd of the temprature fluctuations in the shower and the hot tub would start out hot and end up cold the tankless could not heat the heavy water demand of the large opening on the hot tub. We are happier now..the tankless is still hooked up but turned off...we will use it as a back up to our new conventional water heater. By the way we noticed not great savings on our power bill...Just our experience.
