We have the Sears Kenmore Elite Stainless steel dual fuel range with 5 gas burners on top. It has two electric ovens, one regular one that does broil, bake, convection bake, and a smallish one for when you don't need B I G or convection. I'm old fashioned and adjust the burner by looking at the size of the fire but appreciate the better temp control of the electric ovens.
It works great so far 7 years and no regrets. I really love our range hood which has the motor and squirrel cage up on the roof so although it is really powerful (not safe for small children or pets) but really quiet. I designed my own range hood in galvanized sheet metal but covered it for decorative purposes with stained oak. Even if I would have purchased a hood, I'd strip out the under-powered stock motor and put a unit up on the roof (at least in the attic) so it would be really quiet.
A feature you don't see very often but is extremely practical is a hole in the counter top over a trash can. A wood cover/chopping board will plug the hole and look just fine. When you are chopping veggies or trimming meat the discards go down the hole. V E R R Y convenient.
Granite is a very practical material, you'll like it. It is as strong as a rock.
