Good answer!!! The "little worms in pork" he refers to is called "Trichinosis". If you cook the meat properly it isn't a problem.

It does not apply to privately raised or uninspected meat but for a long time now the USDA and the NPA has said that it is fine to eat pork on the pink side...since 2011 they have recommended an internal temp of 145* (med/med.-rare)...previously the recommended temp was 160*

Retrograding of potatoes is a way to get cooked potatoes to gain firmness in texture and enhances the flavor. The way you retrograde is to simply cool the cooked potatoes down to below 40 degrees and hold for 1/2 hour or so. It simply fully congeals the gelatinized starch in the potato. It is especially useful in preparing potatoes prior to their use as potato salad or re-fried as hash browns. It also helps to not overcook the potato prior to retrograding if it is to be used for hash browns.
