The absolute most over rated cut of beef has to be the rib eye steak...choice, prime, restaurant grade, broiled, grilled from rare to med, bone in/bone out they simply do not deserve their reputation of being a great steak...from natural charcoal to sous-vide...perfectly cooked the lack of tenderness overwhelms the reputation...Yes...they have great taste due to the marbling etc. but cooked as individual steaks (compared to a "rib roast) they simply do not even come close...no better than the average strip steak for tenderness...cuts like Porterhouse and even t-bones are much better for both taste and tenderness IMO...
Also considering the amount of waste (inedible fat, gristle and bone) tenderloin is worth the extra $...if you want a tasty tender piece of beef where there is no waste...

End cut Prime rib with aujus....yum. Heck no to the horseradish...

I was talking to the wife and we decided we like BBQ hamburgers cooked at home as much as steak.

When we make them, we have guacamole, jack cheese, and all the trimmings which makes them so good. Same for fajitas, chicken or beef.

No photos but the wife did potatoes and eggs in the Instant Pot at the same time for potato salad. 4 minutes at pressure and both were cooked perfectly + the eggs peel really well.

Are those potatoes scalloped? Looks great, not all wrecked with veggies. Simple is often better.

6 small potatoes sliced thin
1 large sweet onion sliced thin
1 sheet heavy duty foil folded in half, pammed on the inside
Put the potatoes and onions in foil.
Slice up 1/2 stick of butter on top.
Heavy salt and pepper.
Seal two sides of foil envelope.
Add 1/4 cup of water and seal 3rd side.
Place on top grill rack for 35 minutes.
20 minutes into it, start the steaks.
Steaks were 4 rib eyes marinated overnight with salt, pepper, Worcestershire sauce and a few drops of liquid smoke.
5 minutes flip steaks.
4 minutes remove steaks to foil pouch, seal, and cover with a couple towels to keep heat in.
Let steaks rest while potatoes finish.
When 35 minutes are up, remove potatoes from grill, slit foil, pour into serving bowl.
Set on table, unwrap steaks.
EAT!
