I sold a few yearlings last week and I have been creep feeding them so they were good looking yearlings, the 350-400 lb heifers averaged a $1.03 a pound, 400-450 steers averaged $1.28 a lb , while one steer that I suspect was bought by an individual for feeding out to butcher brought $1.55 lb , so it was a poor day at the market for me, I am seriously considering getting out of the cow business, which may be exactly what somebody wants.

This is horrible. While meat is at soylent green prices, the ranchers are getting screwed. More Local processors could help. If meat is not bought at big retailers, the price will come down.

I believe the big packers should be investigated why prices are so high...

A local butcher is leaning more in the direction of making dog food as he is sick and tired of Government meddling in his slaughtering/butcher business. It would be a loss if he leaves the business. Yet, I have to confess, I only buy his (great) sausages and not beef. I always got shocked when buying meat at a butcher. At the grocery store, the price is mixed in with everything else and it's easeir to swallow, or ignor. Besides, butchers never have the "Enjoy Tonight" 50% off stickers!

We have a small USDA inspected slaughterhouse not far away, but it is running as hard as possible to keep the local markets stocked. There are a couple mobile slaughter operations that will coordinate with butchers to get your cows and pigs done, but they are not set up to shave hogs. They'll take the head and hide as partial payment, but I like to smoke the jowls along with the hams and sides. If you have a front loader or a couple buddies and an old metal bathtub you can build a fire under, you might take care of slaughtering a hog yourself, then haul it to the butcher to get cut and wrapped or cured and smoked. Getting rid of the offal is the only real problem.

Homegrown pork can really be premium, since a pig tastes like what it has been eating. A few years back I cleaned out an oak grove by pasturing pigs and goats in it. For two weeks, the pigs quit coming to the trough. All I could hear was crunching, I suppose acorns and snails. They did a great job cleaning things out, but pigs on mast are strong flavored. I finished them in the fall, on apples, garden vegetables, corn, and junk milk. The flavor was wonderful!

It looks like ground beef has come back down to $3.99/lb. Not sure if it is a Memorial Weekend sale or not. It was $6.38/lb the other day.

Angus roasts are $7.98/lb if you buy 2.

A large ribeye roast is $12.98/lb and they weigh over 5 lbs and up.

I picked up some boneless pork ribs for $1.97/lb last week. Let's hear it for local processors. I was tempted by whole tri-tips for $5.89/lb, but that is too much meat for my wife and me. I guess I should fire up the oak pit and invite friends for a BBQ.
