Looks good. I did not think to slice mine.
Today is a big kraut day, I will get a few gallons in the crocks

Batch #2 in 17 quart jars off to the fridge. One more batch to go which is mostly my kimchi recipe plus a few small test recipes. Jalapeño/cilantro, curry, juniper/caraway, that sort of thing.

That looks great! I had some of my red kraut last night, piled high on a sausage sandwich. Onion rings, french fries, and some homemade potatoes chips on the side, made with onions and potatoes from our gardens.
