Well the wife is at it again this morning! She has another batch of salsa cooking and last night dad loaded her up with more vegetables from his garden. I'll have pics tonight. FG, your Zucchini bread looked so good I asked my wife if she had time to bake some and she said yes!

Yum! Yum! I have about 12 loaves in the freezer, and have given away many more. The recipe makes 2 loaves at a time, but as soon as 2 come out of the oven, I usually have 2 more ready to go in. I LOVE this time of year, and enjoy the eating part in the off season too!

Here is her canning for this morning. Unfortunately she did not have time to bake bread as she still has a job to go to after all this work.

hey all you canning experts I have a question. the wife and I were cleaning out cabinets and we have some canned green beans from 09. my question how long is canned food good as long as the seal is not broken????????. I have had answers to this question but all answers vary a lot.

I asked my wife how long, she told me most say 1 year but she has heard 2 ?????? She did not sound as if she was convinced of that.

I think it would depend on the acidity of the food too. I think anything from '09, I'd likely throw out. 2 years would be all I would want to try for on green beans. Nothing scientific, just my thoughts.

(Heck, i've heard that home canning is unsafe, by those that want us to buy their canned goods in the stores.)

The oldest I've had was about 5 yrs old. Tasted good it was home made chili sauce. My mother made it years ago before she passed away. I started canning again after I tasted that and remembered how much I missed it. Now my wife has me canning from mid August to September. My mother used to say open it up if smells good eat it.

When I woke up this morning all this was setting on the kitchen counter. I don't know where my wife finds the energy to stay up and do this but she does.

Dill spears, bread & butter, and her new recipe Senfgurken pickles.

same thing happens at my house i'm in bed and the wife is canning. I always ask her if I can do anything to help and she say's yeah go to bed. oh and thanks everyone for the canned time span. my mom always said the same as bearcreek paul mom said, open it and smell of it but I think we will pour these out we need the cans for the beans they will be ready this week.

Want to trade recipes, dirt ditch? I'd like the Dill spear and Senfgurken recipes. I have several good Bread and Butter, but would take that too, if you are offering.

I think I'd better get to Costco and get more large containers of vinegar! :cool2:
