On this smoker iit s not a restrictor plate but a false floor under which the smoke travels through from the firebox and at the end it turns up into the smoke chamber and reverse flow to smoke the meat and exit the stack. it makes it easy to control the smoke temp and allows lower temperatures for brisket etc. Usually 225 F can be maintained pretty easily

If you have a fat wallet or are willing to buy a smoker that you can sell in a few year for as much as you paid for it, go to Yoder Smokers. Best place to find them is atbbq.com. I bought a smaller one The Cheynne model made of 1/4" plate, 5 years of use still looks like new. They have a lifetime warrantee I think and are made near Witicha KS I think. They are expensive, but really good. They have pellet, offset smokers, and grills.

Well, the catch limit at my group's favorite lake has been raised this year because they are overrun with trout.

I know this is a terrible problem, but the issue we have is that we have been taking home more fish than we could eat fresh for a few years and we don't really like them frozen. Even if we release a lot of the fish we catch, we always keep the ones that aren't going to make it.

So, the thought of a smoker has come up. Any recommendations for a good quality smoker that will hold 30 to 40 trout maybe 14-16". If it would take a medium-large turkey also that would be a real plus.

We are more interested in a quality unit than a light duty Wally World special. Something that will last for years even if we use it a few times per month from CoPilot.
tired of my cheap Brinkmann smoker-doesn't hold heat in cool-cold weather. thinking of the weber 22.5 smokey mountain cooker. how is this smoker and does it do ok in cool-cold temps? is there some better smoker available? probably less than $800. thanks.

We’ve owned a Big Green Egg for several years–when we bought our house after living in an apartment, it was the first thing we went out and bought. I have never been happier about a purchase.


I use it mostly for smoking turkey and ribs. The results are amazing–the smoke flavor comes in as a subtle undertone, rather than overwhelming everything else. And, it requires much less cooking time than metal smokers. I can do a whole turkey in about 2 hours techwiff.

My most rewarding experience using it was last fall, when I smoked a brisket, using a dry rub, a wet baste, and mesquite chips. Although still took about 8 hours or more, it was worth every minute of my time.

My enthusiasm for the BGE borders on the evangelical. Just make sure that if you do buy one, you get the largest size, because the smaller ones supposedly don’t circulate the air as effectively, and the grill space is on the small size.

Now if only I can find a place near me where I can get one of those Texas-size briskets. [:(]
Look at Costco, they had some huge briskets a few weeks ago, huge price as well.

Someone in Salmon country might have better suggestions but I like low temperature for fish so it doesn't dry out before smoking long enough. As for helping a smoker hold heat better in cold weather a welder's blanket will do that.

I have had a vertical Pit Boss and it was junk. I have had this one for 3 years now and has never failed me. It has been replaced by a newer model I believe but if mine died today I would buy another.

I have read it many times.. Thanks for resurrecting a 12 year old thread. I use a Kamodo grill for grilling and smoking. If you want to burn better wood and serve bigger crowds, you'll want to go in another direction. But this is easy and turns out some great food.
