What do you do with the meat from those animals? Do they distribute it to the locals? Sell it?

When I hunted in Namibia, the locals got most of the meet. We kept parts of some of the animals for meals, and some was kept for making biltong and different types of sausages. The locals ate just about every part of the animal, including the heart and liver while skinning them out. They would start a fire and then drop those parts right onto the coals. As they worked on the skin, they would slice off pieces of whatever they put on the fire and snack on it, ashes and all. While I've always been pretty open to trying all types of meat, I have to admit to not accepting any of those pieces when offered.

Good to see that they put it to good use. I'm sure they find a use for everything, just like an ancestors did in this country 100+ years ago. I don't anticipate hunting in another country, but would like to go elk hunting one of these years.

I'm with you though, I wouldn't try those strange parts of the animal. I would try the meat, but not the heart/liver/etc. Of course, I like things to be clean when I eat it, and I'm sure their hands aren't the cleanest when handling the meat. :)

I hunted South Africa in September. With the outfitter I hunted with, his main staff (skinners,trackers, cooks, maids, ranch hands etc.) are provided some basic lodging on the property. The game meat goes to them and nothing is left to waste. They're also provided with a sack of onions and potatoes each month and taken into town once a month so they can shop and get additional things they need, using their own money.

The camp cook would also make venison dishes if you requested. I've had eland, impala, wildebeest and kudu.

I hunt my own property most of the time. Ducks & geese down in the swamp. Grouse and the occasional woodcock (not hardly worth the shell). I take the pellet gun out for gray squirrels. Porcupines, woodchuck, beaver, muskrat, gray foxes are all compost animals. I've taken deer in the garden from the back porch, and wild turkey from the front steps.
