Don, noticing the lack of sugar makes me wonder whether this is a dessert pie or a casserole or main dish kind of pie.

You know jinman started This ain't no Garden of Eden about a year and a half ago, and if you go to Post #76 in that thread, you'll find the recipe that was posted by clenhart and that I tried last year; not bad at all, but of course it had sugar in it.

Cyril: I'll admit, you do have me beat on those weeds.;) I'm down to weeding every couple of weeks and it seems to be holding pretty well. You'll be eating fresh strawberries soon.:licking:

Finally got time to weed those onions tonight. They look a lot better now.

We just started the garden in this area this spring. Took an corner of the lawn and tilled it under to make the garden. Man can the grass come back in a hurry.:confused2: I suspect the weeds won't be as bad next year after a few more tillings.

OOOPS! Sugar has been added in the edited recipe, thanks Bird.

Bird post #76 seems to be the deluxe version, and both use 2 cups of cooked squash, however my Mom's seems to be the fat free recipe which means I can eat more.

When I gave my wife the corrected recipe, she looked at it then chuckled and said "Hmmm... Sugar. I was wondering about a pie with no sugar in it."

We had our fill of kabocha through fall, winter, and spring until the wife got tired of the plants and weed eated em. :laughing: Now there is a volunteer replacement that is blossomed and fruiting. Great addition to soups, steamed and mashed, baked with maple syrup and butter... even deep fried it like french fries once, but does not crisp like potatoes.

For dinner today I grilled 2 pipinola (chayote) sliced and drizzled with olive oil, salt & pepper, and italian seasoning. Served with a couple of ribeyes. I don't peel them, but cut it off as I eat it. Mixed with the cut up meat trimming, the dogs seem to enjoy it also as they lick their plates clean. Wife was teasing me about leaving in the seed, but I like the nutty flavor. Have been told the young shoots are excellent in salad or stir fry but haven't tried yet.

Here it is now please release me!

2 cups of yellow squash - cooked till tender and drained (un-pealed)
dash of salt
1 cup sugar
2 eggs
2 TBS flour
1/2 tsp cinnamon
1/2 tsp vanilla

Blend all ingredients in a blender and put into two pies shells and bake at 375 degrees F for 25-30 minutes.

EDIT: Mark, I copied your relish recipe also. I told my wife about it also and she wants to give it a try. As far as the pie goes, I'm sure Kathy will make it with Splenda to see how that works. Last week she made a peach cobbler with Splenda instead of sugar and it is terrific. Splenda works good in pies, but it's no good for jams or jellies according to Kathy. Sugar seems to be the only thing that works for them.

LOL, knew I should have just said "Japanese pumpkin squash".

Pipinola might be more a local term, but chayote is what it's called on Foodnetwork. In fact last evening grilled chayote slices was part of an Iron Chef presentation, but the surprise ingredient was banana.

my others have the wilting virus and will soon expire.

One of my zuke plants was looking ill the day before yesterday and dead today and the other 2 Zukes are looking ill today. A couple of the leaves has what looks like mildew on them. Just wondering if it was the same thing.
