My wife made chicken taco soup on Friday and about half is left for reheating. I will have some of that mid-afternoon. I'll close my eyes and dream it is some of Lou's gumbo.:D

TxDon:

Get well soon. At least it's good sitting in doors near the fire weather. Take it easy.

You know the problem with having half of anything Kraut. You may think it's going to stay on it's side, but before you know it, it's rolling across the Polish Sausage like nobody's business. Pizza in our times, yeah, right.

I got it too.

Subway has nothing on Jimmy Jon's. They are in Austin and I think there is one in The Woodlands. Not sure where else. But we always have a Jimmy Jon's while I'm in Austin.

Don, I hope you get better soon. It is scary hearing about all these folks dying from the flu. You always think that it is someone with a weakened immune system due to some other major issue, but it is hitting normally healthy folks hard too. Glad that you sought help, even in the middle of the night. Did you head to Austin? If so, the time getting there would be longer if it was in the daytime.

How do you mail soup in a bowl?:)

Do restaurants in your area offer soup by the cup or by the bowl at a higher price?

In most up here if you pour the cup of soup into their soup bowl it will be the same amount of soup :confused3:

I guess you are paying extra for presentation.

That's how I cook too, Lou! But I do enjoy leftovers, and freeze some for later, as well. In fact, things like soup, stew, chili and gumbo are better the second day!

Don,
Glad your better. Elgin doesn't have 24/7 emergency room?

I was in Austin and Kyle yesterday. I helped move my daughter in with a friend that was also an ex room mate. She has a 3 bedroom house down in Kyle. The no good fiancee didn't want to get married. They had to move out anyway, as Rebecca's other friend is coming home from deployment and will move back into the house Rebecca was renting for a song.

I sure pray Rebecca learned her lesson. Now, new room mate is letting her stay 6 months to get on her feet. So we got six months breathing room, if Rebecca can manage a new baby and an hour work commute.

Now, to help her might jeopardize my retirement plans. Best plan would be to do my retirement plans and include her and my Grand daughter. That would entail me moving retirement plan property closer to north Austin, (she works for the state near I-35 and 290) or her commuting a distance, like she will do now from Kyle. I wanted to be within an hour of her in retirement. She is fixin' to file for child support. They parted with a good friendship, so we will see. He works for the state, so getting child support should be easy. But I am still holding my breath.

On a happier note....My Big RED Beast will be paid off April Fools Day.

Thanks for letting me vent.
hugs, Brandi

Hardest part of gumbo is making the roux, and even that isn't hard, just takes a little time. I usually throw it all in mine, sausage, chicken, shrimp and crabs (blue).

Brandi I'm unaware of any Hospital or urgent care in Elgin. There is a good Urgent Care in Bastrop but not 24/7.

Kyle, I went to St.Mark's ER. If it would have been heart related then another 20 minute flight to Austin. Since I know what it feels like to have a heart attack I was betting this was not, this was worse - no specific pain just intense nausea that makes you almost pass out. I think the flu started it but specific to me is dehydration nausea which I need an IV to get fluids. I could not walk into the ER but I did walk out 2 hours later. I figure that was a $500 glass of water and I was enjoying it drip by drip.

Ron, my wife stops in a Chinese buffet restaurant in a town 20 miles south of us and buys me a pint container of hot-n-sour soup. It's the same price as on their menu, but of course, not the same as eating the buffet where you can eat hot-n-sour for an appetizer, the main course, and dessert. Yep! I love it that much.:D

FG, there's a restaurant in downtown Boyd on Hwy 114 called GoGo Gumbo. They schedule cooking classes for people wanting to learn Cajun cookin'. An alternative to that is just eating at their restaurant, of course. There always seems to be a waiting line unless you get there early.

Thanks, I am feeling good, keeping hydrated. That fire looks toasty. I have ours ready to fire up in the morning, it just didn't quite get cold enough in the house today, but the predicted 24˚ in the morning - ouch!

Jim you have me looking for recipes for hot and sour soup (vegan fat free, of course) and it can be made but not without special ingredients which are at least 35 miles away. Sigh. I'll just have to settle for a popsicle tonight.

Try Potbelly sometime. They are in Dallas and now Austin, and spreading across the state.

My mom's family was SE Texas, and I got recipes from them on the gumbo and other good eats. In my travels, I met some neat ladies at some of the air races that were from LA, and they shared crawfish recipes with me! Life's been good, and, at least for now, I don't need cooking classes, in Cajun cuisine. And I still prefer home cooking to dine out. Only exception to that usually is that all-you-can-eat Chinese Buffet. I just won't allow myself to do that more than 2-3 times a year. I can make really good pepper steak and other dishes, but to get that much variety at one time, it has to be the buffet. :licking:
