Merry Christmas Lou. I remember maybe back in 1985 Christmas, that the bays actually froze around the mouths of the freshwater tributaries. We had single digit cold spell for days. Matagorda bay had tens of thousands of dead fish where Garcitas and Lavaca river entered it. There was ice across the whole thing in places. My friends nearly drowned in an airboat accident.

Christmas 1983..............10 degrees on Lake Conroe. That morning, Lake Conroe Bay had a thin glaze of ice on it. First Christmas in our new house on Lake Conroe Bay. We had the wood stove roaring.

The worst ice storm I can remember in Dallas was December 30-31, 1978. I was commander of the communications division that Saturday morning when one of my sergeants called. It was a day off for him, too, but when he saw what the weather was, he just went on in. My squad car, parked in the driveway, was completely iced over. I heated the key with a cigarette lighter to get it to go into the lock, to unlock the door, poured hot water around the top and rear edge of the door to thaw it enough to get the door open. A large number of people, including my boss, had no electric power in their homes for 3 days or more. And even though I had a full crew on duty in the communications center, I handled about 130 calls myself that day. When people couldn't get through on the phone to the electric company, they called the police department. I hope we never see another one like that one.

Don, they have a new indoor light show with a great message that even my kids watched.

I love their dining hall. Especially on a cold morning with a hot fire blazing in the fireplace.

Do they still have the lake light show?

Merry Christmas Y'all. I found some led battery powered lights and gave Booger a Christmas tree. Booger's Christmas Tree.jpg Chloe will help decorate it tomorrow.

Hey Y'all. Just to show I can do kitchen "projects" too, here's a photo of my first bacon wrapped turkey. 6 pounds of bacon wrapping 15 pounds of gobble gobble! Yummy:licking: Brandi's First Bacon Wrapped Turkey Christmas 2016.jpg

Funny thing.........I misread the recipe and thought the recipe was referring to oven racks, when it was referring to a pan with a rack. So I had to make a rack for my disposable pan. I cut the handles off of a fish grilling rack and laid it out over the apples, leeks, and carrots! I also didn't buy any cooking string, so I had to use aircraft stainless safety wire to hold the legs together!

Yep...if you not in Texas, you lose.
The turkey came out great. Very, very moist. I'm not much of a spice user in cooking, but I went ahead and stuck to the recipe with the Sage, Rosemary, Thyme, and Parsley with the pureed bacon and butter for the rub baste. Next time I'm gonna cut back on these spices. Also, instead of onion, garlic, and leets, I will try fresh pineapple under the turkey rack.
