Western; In my book, chocolate is the 5th major food group, and important indeed. Was just looking at it from the nutrition standpoint, instead of necessity standpoint!

Whoo Hoo! We just harvested our first ear of corn in 15 years. I was going to wait one more day, then I realized that is exactly what I say every year right before the coon raid. We cooked it in a pan with a fresh picked sweet pepper - good. Whipper does get some credit also for her nightly coon chases keeping them at bay.

Don, Already WOW! Did you plant in February:D or March?

I planted in March and it only got a tinge of frost damage. Potatoes coming out tomorrow.

Don, I think one of my favorite meals is new potatoes and green beans with nice hot cornbread just dry with no butter. I'm one of those folks who only cares for buttered bread about twice a year. I like cornbread and don't use butter or margarine. If cornbread is cooked right, it isn't dry anyhow.

FG19, I love just the taste of fresh squash. Just last night, I sliced a zuc and dipped it raw into spinach dip. No chips needed. The dip has enough calories without adding chips. After I get my fill of fresh squash, I love the variations and casseroles. Thanks for your recipes.:)

Don, you where fortunate with the frost, as you know, we suffered from it Because "someone" North of me couldn't keep the door closed.

What type of corn? Bi-color is my favorite in a sweet variety.

Jim, I love cornbread too, even semi sweet in plain milk, but I have to have butter. The Mexican cornbread is excellent and it is good without butter.

FG19, Sounds like a great casserole!! If you where closer, I'd be a mouse in the pantry:laughing:

Thankyou, this is one that only needs 1 slight variation but it looks good! My onions and tomatoes are ready to pick, just waiting on the squash.....may have to get frozen.

txdon; I'm not sure how well that recipe will do with frozen. It really needs to do its cooking from raw. Not to mention, it would already be sliced, if frozen, and not lengthwise. I guess you can try it, then when your squash comes in, make it from fresh, and let us know how they differ.

jinman; I think you are right about green beans and new potatoes being a perfect meal! I don't even need the cornbread, but wouldn't refuse it! I want mine buttered though. :D I am going to have to make a dip, and have the sliced squash as my chips soon!

Western; If you lived closer, you'd be welcome. I tend to feed the strays around here, as well as a couple of neighbors! :laughing:

One friend makes a casserole with Ritz crackers, and it sounds good, just haven't tried it, due to the Ritz.

A squash casserole with Ritz crackers might be good, but I remember many years ago seeing a recipe for an "Imitation Apple Pie" using Ritz crackers instead of apples. I had to try it, and I guess it was too bad, but it sure wasn't worth doing a second time.:laughing:

What type of corn? Bi-color is my favorite in a sweet variety.

Western, it's just sweet yellow corn from the bins at Ace Hardware. Every single seed came up resulting in mass thinning.
FR19, I forgot the squash slicing would be wrong, can't have that. I can wait a few weeks. My squash just came up yesterday. I just hope the tomatoes don't stop producing in the August heat, but they probably will, so I'll have to remember to freeze a few.

I started doing a new thing with planting this year. I cut the empty paper towel/toilet paper tubes and oatmeal containers and have 2" tall circles and plant the seeds in them. It helps with spacing, watering and identifying the correct sprouts. I also, before planting, put a shovel full of my 2 year old organic homemade compost under each seed circle. I'll see if the yield is the same as twice as many plants. So far the 4 tomato plants are making more tomatoes than we can keep up with and no insect/animal pest are invading this organic area.

Nothing finer than fresh out of the garden sweet corn ... First yr in ages I didn't get any planted ... I'm jealous

OK, guys! I don't think I have a recipe for squash with chocolate, but I'll be looking for one, just for y'all! Who knows what sort of fun creations I might find? This should prove interesting ayway! :)

Okay, I'll take responsibility for the multiple late frosts if you take responsibility for the hail storms. That way we can spread the blame.:laughing:

Don, I have some 3' tall picket fence panels to give 50% shading. Last year, I used them above my pepper plants and they kept producing fine. This year, I'm gonna put them up over my tomatoes when it gets hot as an experiment. I think the tomatoes can keep blooming in the heat if they aren't subjected to 12 hours per day of searing sunlight. I may try the pickets on some plants and not on others just to make a scientific comparison. If it doesn't help, why waste my time when I could be sittin' in the shade with a cool Shiner Bock.:thumbsup:

Interesting thought! I think this will be a fun way to search out, (and create), new recipes for squash. I like working from scratch, and getting ideas, when it comes to the kitchen!

I would think a casserole type dish with grilled chicken breast diced, squash, mole, with some asadero cheese? Or use that as a filling-start with a base of tortillas (maybe coated in mole?), then some filling, then a layer of tortillas, etc..?

Probably could work some fresh tomato in there somehow.

Of course the corn is ready at different times in different parts of the country, but we were in Sayre, PA, for 4 months in 1993 and they'd had a lot of flooding that delayed some planting. I remember the newspaper said they traditionally had fresh corn for July 4th, but that year it was about the 20th-22nd before any was ready. But then there was lots of it and cheap at a roadside stand just north of where we were staying in the motorhome.

If you use zucchini, then you may have to peel it if the zucs are big. The peel gets tough on them pretty quickly. Smaller zucs are better and don't have to be peeled. Most yellow squash has a very tender peel when picked, but the bigger ones toughen up if you keep them for several days. Yesterday, I noticed I have a tennis ball sized spaghetti squash. The last time I grew them, they were the size of small watermelons, so they have a way to go. We also picked a couple of cucumbers already.

Jim, been alooong while since I raised some hail, but I will take responsibility for that:laughing: I think your "idea with the fence panels may have some promise, I have Oak trees, so "ain"t moving them around:laughing: I lso wonder if the thick mulch will aid the temp regulation in the ground around mine? we will see.

If any of you are lucky enough to find Olathe Sweet corn around here, you have to try it. Grown in Olathe Colorado and is the best corn, cooked anyway you want, I have ever had...Hands down.

They have a festival, rightly called the "Olathe Sweet Corn Festival" When we lived there, we got the festival and the live entertainment one year was the band "Loverboy" It was incredible. Likely out of most of y'all's taste though, being "old" and all:shocked:

Lou, I know what ya mean!! I caught the only 5 "moles" I think I had:D Ahh Mole Poblano. Had it in "green", but hard to find around here.

Also hard to find around here ,(that is good), is Green chili enchilada sauce. Had some Homemade in N. Mexico last summer while out of town working, brother, I could have eat there everyday!!
