ok what would be a good way to ensure i get enough water to the other side? some type of meter?

I think I would use a piece of soaker hose with an emitter around each tree. A couple of years to allow the roots to grow and establish and you could go back to your original plan.

I typically use the perforated tubing or soaker hose and run it in a circle around the tree on the surface small trees may start out with a 4ft diameter circle and a good rule of thumb is a little less than the span of the tree to get to the end of the roots. You can pin down the tubing with some small wire loops if yo need to mow over it.
