I'm looking at a Wallenstein FX 85 that's being sold used. Is it a good size for a Ford 5610? I have two, one 2wd and one 4wd both with front weight (counterweights on one, loader on the other). Most of the users seem to be running this winch on compact tractors, not full size. Am I likely to tear it up running it on a larger machine?

My other option for a winch is a Hyster winch to go on my D7E, which would probably do a lot more damage in the woods.

I don't see any reason that you would tear it up unless you try too. If you keep your hitches to a size that fits within the winch dimensions rather than the maximum that your 3ph can lift and don't bull and jam around obstructions at you should be fine. The clutch will protect the winch while winching in your logs by slipping if the cable tension gets to high. You, the driver, protects the winch while skidding the hitch out of the woods by going easy.
Make sue it will fit on your 3ph and the drive shaft will line up OK.
