Last night I smoked my BEST YET rack of ribs.
Wife and I have agreed we are going to try shopping from the freezer and cooking up stuff we've had so we can empty and clean the freezer.
It was gonna be warm and sunny on a Friday, I was gonna work from home with no hellish commute, so I said I'll BBQ. She found a rack of ribs. Work went later than I planned but I got a good fire started in my little smoker and laid some old cherry on the coals and I did the olive oil spray trick and then rubbed my Sezged Rib Rub. She made a killer salad, and roasted potato "jo jo's" both white and sweet. while it was smoking I fed the horses, moved hay, and a few of my other chores, many in pitch dark.
The last hour the wife and I had a Friday Happy hour of tequila shots with lime wedges :licking: (Long, long ago she proposed while we were out to dinner and drinking some fine sipping tequilas...) This was just the cheap stuff unfortunately.
I decided to use my remote talking meat thermometer she bought me a few years ago, and poked a thick spot and it was 168 degrees, and it hit 170 in 3 min and we were done! the two end bones just fell out when I moved it to a tray to bring it inside. No direct eat at all, strickly cherry wood smoke
There are no pictures, heck there are only 3 ribs left. The baby even knawed one of the smaller bones and picked it clean, and asked for another! This was a big rack with the skirts and the breast bone. Manly ribs not baby ribs...

Wow that sounds soooo good, havent smoked any ribs in a few months, too darn cold, but youve got me praying for spring !!!
