Watcha eating?

On the topic of salsa, does anyone have a recipe that is just basic vegetables and spices but none of the salt, etc?

I like this one a lot I got from a chef I know

½ cups Chopped Watermelon
¼ cups Chopped Tomato
2 Tablespoons Chopped Red Onion
1 Tablespoon Chopped Jalapeno
1 Tablespoon Chopped Cilantro
2 Tablespoons Freshly Squeezed Lime Juice

And they still don't have it right, and will have to change it again! So, as I stated before, increased grains are what they want to recommend. I just don't find that as healthy as what was recommended and what kids (and adults) ate 40 or more years ago.

Actually, if you look at the food pyramid of 1992 you will see a reduction of grains. In 1992 grains was the largest block on the pyramid now it is an equal block. And I agree with you they still don't have it right. There is no need for that side of dairy. With a third of the population lactose intolerant, instead of "Got Milk!" it should be "Get Weaned!"

The salsa I use has corn and black beans in it. Cheap filler.

Chopped tomatoes
Chopped jalapenos
chopped cilantro
chopped onion
minced garlic

All added in proportions to your taste. stir well I usually just add until visually pleasing in color, but if you have really sweet onion, you may want to add a touch more of it. I usually add the pepper, seeds, ribs and all, because I like it warm. I have also been known to add habanero peppers, if the jalapenos were not hot enough. If you think it need salt, as a light sprinkling of garlic salt.

Yet some folks quote it, and some actually use it as the basis for healthy eating. I am not trying to suggest anyone here, I am concerned about much of the public, that doesn't do their own research (and wouldn't know where to begin), and actually believes whatever the gov't says is the way it should be. I think the groups, pyramids, plates, etc. actually do a disservice to many (most).

Can you give me some typical starting measurements? This one sounds good.

All fresh ingredients, and I don't know how spicy you like things, but here goes:

3 tomatoes
2 jalapenos (if you seed them to save heat, add at least another 1-2, and more if peppers are really mild)
handful of cilantro (probably will be about 1/3 cup chopped)
1/2 medium onion
2 cloves garlic
1/4 tsp garlic salt

You can also squeeze the juice of a fresh lime (or the juice of a wedge of lime, if really juicy) over it to really perk it up. Next time I make some of this, I'll actually try to get some measures for you. Since I won't touch a store bought tomato, it will be another 2-3 weeks before I begin making this again.

Sorry, I doubt I make anything exactly the same twice, because I just add what I have on hand, or what I like, and never think much about it. This should get you started though, and once you taste it, you can tweak it to your liking.

Same as mine as well. I also add lime juice, and will roast the peppers first if I'm feeling ambitious.
