Unfortunately, the carbs are not in the best interest of being healthy either, IMO. And, unless one has the ability to get veggies frozen quickly, the nutrition levels begin to drop rapidly. Given the institutional way the school meals are prepared, I wouldn't count on kids getting good nutrition from a vegan/vegetarian type of diet. And again, they'd have to actually eat it, and many, if not most, won't.
I also agree with what some of the others are saying, exercise is the biggest help, in preventing the obesity epidemic, and its accompanying health problems.
As far as fattening livestock, mine run on pasture, are not penned. But, add a little grain to their knee deep, good grass diet, and their weight climbs rapidly. I do not overstock pastures, so do not need to "feed" the livestock. I let someone else worry about that, when I sell them, except for the one I will put in the freezer, and it will be just organically raised, grass fed. Takes a few months longer to get to slaughter weight, but well worth it.
I also have to wonder how much the thought of grains being "healthy and needed in increased proportions" is due to companies that have a stake in selling more grains. They have deep pockets. And to know that most of the grain we produce is shipped abroad, and that most of what we get to buy is grown in China, especially when it comes to wheat, doesn't make me confident that grains are all that good for us, anymore.
