Christmas Day Tamales.
I kind of cheat with the Tamale press but it made 4 dozen Tamales really fast. I steamed 2 dozen tamales in each of my Instant Pots - came out perfect.
No lard or fats were used and they detached from the husk just fine. The "meat" is actually spicy pinto beans cooked in the Instant pot the night before.
Instead of masa for the outer shell we use whole grain corn flour which forms and taste just like masa.
