It guns are going for a reference.

Like checking a manifold for a cold/dead cylinder. Or see if one part of the system is hotter than others. Or measuring inlwt/outlet temps of heat exchangers, like a radiator or the furnace in your house.

Good comparison tool....but not accurate. If you measured 215, it could easily be 165......or it could be 265.

Flick a drop of water on it. See if it boils. If it does, you are for sure hotter than I would like.

You can also get temperature crayons (old school for sure!) and mark up your lines to see how hot the fluid is getting. They're eight or ten bucks each.
