We are getting parts together for a new project but are having trouble locating a source for a hydraulic adjustable restrictor or orifice. We will be needing one to slow a hydraulic motor and we think an adjustable model might be better suited than a fixed model. We have tried Parker, McMaster's, Tractor Supply, and even eBay without luck so far.

It's pretty sad when you can't find what you are looking for at eBay. Anyone have any sources that we are not aware of?

there are two kinds, a simple kind where the bolt screws into the oil flow (which obviously restricts the flow) and one that divides the flow (I don't know how) so that the gpm does not get choked at the pump.

Their web site does not list everything they can get, their catalog looks like a phone book!

Try ( hydraulic flow control ).

This is probably a bypass valve back to the hydraulic resevoir. If your ambitious a properly rated manually operated globe vale or a pressure regulator could probably be adapted for use.

I'd stick to the commercial version which should be able to maintain a set pressure to the hydaulic implement.

I don't know a lot about hydrulics but I have to slow the chute rotation of my snow blower. I was thinking about putting a restrictor in the line and read your post.
This is from the link you posted:

Does this mean the chute rotation will be slowed in one direction and not in the other? If so, will I need to get two to control both directions?

Al that is exactly the way we understand that particular valve to work, that is you would need two. We also suspect that a number of valves that will restrict the flow going both ways so we are still shopping the lists that everyone was kind enough to supply. I think we are going to opt for a simple adjustable valve over a fixed counterpart but we'll see.

You will need one for each hose that connects to a double acting cylinder.

The restrictor will restrict flow in one direction and allow full flow in the other. Just make sure you connect it so that the restricted flow is the direction going to the cylinder.
