Would I be making a mistake with this bushhog

I have a BH 286 and it's a good cutter. If I recall correctly it weighs about 1000 lbs with chains. If your tractor can handle the weight I believe the cutting won't be a problem. My tractor is at the lower limits of their recommendations for HP and I've never felt that it was taxed for power. With sharp blades the pasture will look like you had a finish mower out there!

Just for comparison, I have a 35 HP tractor with ~30 PTO HP. It pulls a 72" medium duty (700 pound) Woods just fine. I wouldn't want to pull anything heavier though!

There are several cutters that are 6 foot in size and will work just fine behind you Kubota. I've used a 6 foot behind a 27hp/24PTO hp tractor before with only minimal difficulty in the really thick stuff. For what you've got planned I'm sure a lighter duty cutter would work just fine. Or if you're still looking for a heavier duty unit, that might still be OK hp-wise, I'd look at Woods.
