The book was wrong.
4.8qts filled crankcase full on dipstick & has not smoked since on my steep banks.

Welllll... the 'book' isn't really wrong. I've always assumed that the amount listed is 'wet up' amount (absolutely dry).

Whenever I've changed any oil/fluid, I've always adjusted the amount for a retained amount that hasn't drained. Sure, it's a 'guestament', especially the initial amount added after a change, but I always record the replacement amount in my Owner Manual for the next change.

While it appears the problem is solved, on the off chance that it is not - I'll submit my $0.02.
Agree with /pine that white smoke means water.
Your 550 gallon fuel tank is my area of concern. You may be getting condensation forming in that tank, giving you too much water in your fuel
From my readings, diesel fuel should be used within 6 months (That was the outside mentioned. Me ? I'd use it a whole lot sooner than that). Vehicle columnists advice to diesel engine owners is to buy diesel from a station that moves a lot of diesel - not having old fuel in their tanks. Tractor fuel tanks filled each night to obviate the risk of condensation forming in the fuel tank

I run a Huge Napa 4849 HydroSorb fuel filter on my 550gal tank in side a barn & never had an issue with water or contamination.
the excessive white smoke smelled like oil & the bank was very steep.

idk. If it was moisture : it hadn’t did it since I run 2qts less oil With oil changes.

Does the white smoke smell strongly of diesel? Unburned diesel fog is white.

The excessive white smoke smells like burnt engine oil to me.

Hmm. It could be burn't engine oil of course - but to me that usually has a sort of bluish color.
The reason I mentioned the unburned diesel is that it is common when a diesel "misses a stroke" it often shoots out a puff a shot of white smoke called diesel fog.
But you will know that because there isn't any missing that the diesel fog occurs exactly when the engine staggers and obviously misfires.

You will also get diesel fog some cold mornings before it starts.
