Never had horse meat, I have eaten rabbit and shark meat.
I grew up out in the country, so I ate lots of cottontail rabbits, along with a few swamp rabbits and jack rabbits, squirrels, raccoon, armadillo, turtle, ducks, quail, doves, meadowlarks, frog legs, and a wide assortment of fish, including just about every kind of bass, sunfish, and catfish from fresh water, including carp, as well as a wide assortment of saltwater fish, and crustaceans including crawfish. Of course we raised our own beef, hogs, and chickens. I only raised domestic rabbits to eat in later life.

I used to have a recipe I got from Alaska for smoking salmon, mighty good eating, but I also used the same recipe to smoke sheepshead fillets and shark steaks. The smoked shark steaks were the best off all; even better than salmon.
