Since many of my projects were in cottage country and many clients wanted wood effect I generally suggested a mix for walls.
What I found (and clients generally agreed) was to do an inner wall in gyprock finished in shade of off white as that would reflect light. Also we'd often simply do half walls with chair railing.
Guess I came to that conclusion because my log cabin was all wood and we'd need lighting all day as the cabin was so somber.
Later when I sold that cabin the folks added huge windows in the eaves and enlarged many of the existing windows. Heck they even painted some logs white.
While natural wood is warm and cozy, the overall effect also can be very depressing.
Contrast highlights the beauty and charm of wood.
JK98 has attained that desired effect with the cabinets and stone. If there had been more wood the kitchen would have become like cooking in the basement.
