I have to weld 1/2" or maybe 5/8" Cat I ears on this 10' grader I bought a couple weeks ago (see pic below).

For those that know, would you recommend the Everlast PowerArc 200ST or the PowerArc 300ST?

And what the heck does "IGBT" mean anyway? Is that some gay lesbian thing? :)

Either would do it, but you might need the 300 after you use that behind your Kubota for a few minutes. That blade would be hard on a 100 Hp tractor.

But seriously, either would work. But I'd probably go with the 300 if you expect to do much welding like that.

Looking at the Everlast 250EX, it looks like it comes with a 18 series water-cooled torch? Is that right? No air cooled torch?

You are right. But that is also the issue at the same time. (I pm'd you about it). 250 amps of power requires watercooling. The PowerTIG 210EXT comes with two torches, both air cooled.
If you are looking at both and weighing the pros and cons, keep in mind that a 200 amp machine (give or take) is all that you are going to need if you don't want to spring for the water cooler, or intend to build your own (or have one already). Of course, you can adapt it so you have a loss type system (water hose in and a drain hose out to your flower bed.) (Did I use too many parenthesis?)
