On our odd collection of knives, and a somewhat careless wife, I also use the cheapo $50 HF 1x30 belt sander with an assortment of belts up to about a 400 grit. I'll start at about 150 grit on each knife and work my way up to the almost "strop" like 400 grit. All the guarding and work support stuff being removed from the sander. The finer belts were ordered from various ebay vendors.

My wife would never, ever, ever cut on a ceramic dish and we have three hardwood cutting boards on the counter right now and always. There are some of her kitchen knives that I am forbidden to use or really even touch and I am a fanatic about taking proper care of a knife. This is a mild stretch but she gets antsy if I hold a ceramic dish in one hand and a sharp knife in the other. Beats me but it makes her happy so I generally shut up.

After many years of using various systems I have found the answer. Cardboard sharpening wheels. Takes less than a minute to restore most knives to crazy sharp. I can sharpen all (lots) of my kitchen knives in less than 15 minutes. Takes longer to get the wheels out than the actual sharpening. I restore the edge about 3 times a year. I will hit them with a steel when needed between sharpenings. I like the Razor sharp system and the wheels last about forever.

I sharpen whenever the lack of cut annoys me, which is about twice as often as the wife does.

My wife annoys me WAY MORE than my knives do. Maybe a hundred times more. :D

Pretty much yes.

I switched to the Epicurean cutting boards. Thin and go easily in the dishwasher. Durable too. Easy on the knives.
