Steering either has it's own dedicated pump or a flow divider, depending on the manufacturer. The 10gpm rating is what is avalible to your impliment circuit & relevant to the conversation. The 5gpm of steering flow gets routed elsewhere one way or another before you care about it.

No clue on "Y". Give use a link so we can look up the item. Flow will be throughout the valve body. 12 gpm will be fine given your 10 gpm available flow. No clue if the power beyond plug is included. Check before you buy. Get hoses at whatever size the basic flow path already has for the supply/PB circuit. Impliment hoses can be smaller most of the time since you are really not using much fluid. Except if you want to run a motor or log splitter.

Good to know 12gpm looks good. I don't want any kind of heat increasing restriction. I'm asking this tractor to do a lot, I understand that. But for now, it's what I own, so it's what I'll use. I'm not the type to trade up all the time. I use stuff until it's used up.

If you did ever trade up, the valve stack and QDs could be moved to a new machine. A lot of the setups have a mounting plate on the ROPS. The valves sit where they can be ran with the right hand and the QDs face the rear- all in one package. Undo 4 hoses and 2 wires and it’s moveable!
