I lookin forward to Kraut smothering tater pancakes.
I thought it was black eyed peas with a coin in it on New Years for good luck.

I processed the last of my 2020 kraut 9 quarts of Kimchi, 3 of Curry and 1 each of Jalepeno/Cilantro and Juniper/Caraway.

Nope, no fizzing whatsoever. In fact, here is a picture of one of the stones that sit on top of the kraut coming out. The brine was a beautiful burgundy color and I was trying to get a picture of it. The picture of the brine color did not work but you can see there are no bubbles. I am not sure I have the stones to eat a kimchi that fizzes.

There was absolutely no scum on top, which I get a little of with some recipes.
Home made coned beef, now there is something that I have been meaning to make. Sounds good! I also love a good rueben. :licking:Not 'scum, the proper name is 'Kalm' and it's the mold growth where oxygen contacts the fermenting Kraut juice. If you didn't have any, you didn't have enough oxygen present in the crock to grow any.
Wife made Rueben sandwiches this evening with home cooked and sliced corn beef on dark rye with swiss and some of our red kraut. Tremendous. I ate 4 and I'll pay for it tomorrow after my morning coffee....![]()
