have you looked to see if there is any water in your fuel separator?

You have the gear, sync-reverser or hydro trans? A quick test if your seat safety switch is still operational is to disconnect it from the seat and put a paper clip or small wire and jump the two terminals together. The switch is notorious for going out or causing issues especially when weather get colder and the seat cushion starts to stiffen up.

Does your clutch have a sensor?? Because its the clutch moving
would think it has something to do with it when it moves to shut
down the engine

You may have restricted fuel delivery. You have enough fuel to idle with no load but when you release the clutch, the added load can't be met with enough fuel flow so the engine dies.

Check the fuel delivery.

I would try this before doing anything else. Aside from starting with the easiest things first, it sounds like a safety switch issue.
