A neighbor just gave us a fresh elk liver. We'll serve it with vegetables. Mmmm, onions.

that is seriously wacky
put out by Texas Onion Board?....
I love onions too
but they have to be sweet, or cooked.
big slice of vidalia onion in a sandwich, yum

simply reinforces links between diabetes and obesity and certain life style choices, like being a vegetarian
That wording could lead one to think diabetes, obesity and life style choice like vegetarian are linked together, so when one occurs the other occurs. Whereas I'm pretty sure you meant to avoid diabetes - obesity bad, vegetarian good.

Basically to reverse diabetes eliminate processed carbs, substitute meat and fat.
Unfortunately, lots of vegie diets are long on processed carbs. That's not good for diabetes.

as someone who has really worked hard to get cholesterol numbers down, isn't it counterintuitive to be
eating lots of fat and meat Scootr?

too bad a medium rare ribeye steak isn't good for you...
I sure like that better than beans, but beans i fully understand are better for me.

I have to take cortisone daily due to prior cancer damage to my adrenal glands and docs all told me very hard
to lose weight when on these pills. But I'm 30 pounds overweight and that is a big risk factor.
I also cannot afford a thousand bucks a month for the Wegovy shots
Though I would invest five grand in myself to see if it worked, but they say the weight comes back.

I don't know how bad having one teaspoon of white sugar in my first cup of coffee is, but I can't see myself drinking black coffee.
And all the sugar substitutes have issues, my favorite Truvia now on the medical warning list.
I've tried honey, no thanks.

newbury, for sure, thank you. Broccoli good. Danish bad.

Most don’t realize how much that extra weight and sedentary lifestyle is destroying their health until it’s too late.

At 5’10”, body weight is ideally 165. This seems ridiculous by western standards.

To be considered “active lifestyle” by kinesiology standards, one must walk 10,000 steps per day ~ 4 miles plus. This is not even considered “athletic”.

By the time you show problems on your cholesterol panel or A1c, or blood glucose, your body is already way beyond the beginning of disease.

I got awakened after doing my own blood testing with the expanded panel, vitamin deficiency panel, and learning about metabolic syndrome and insulin resistance (which I pretty much had).

Losing weight and aiming for “athletic” lifestyle has reversed close to everything. I use fasting and time restrictions on food intake.

My cholesterol looked good on normal run of the mill testing, but the expanded panel was not looking good at all. It has improved significantly over the last year.

Particle size matters

Larry, living alone makes it hard for me to buy lettuce and other veggies that are highly spoilable.
So sadly I wind up throwing out stuff because in some cases I forgot it was in that drawer....
Your soup pot sounds good, particularly
during the winter.

I baked some potatoes this past week. I put one pat of butter on each potato.
I wonder what else I could have used (sour cream likely lower in fat?) that is healthier but gives the potato
some moisture and flavor.
no bacon, no cheese, the old favorites, what else can I use?

if I make my own potato chips and air fry them, is that healthier than baking???
with potatoes, always seems to come down to what are you going to put on top and usually that's the part
that's not so healthy.

I love baked potatoes. Always eat the skins. Love crunchy skins.
I do try to eat sweet potatoes/yams at times. Their skins can get kinda leathery...
We eat a nice salad every day. With us two, we'd do a box of greens in about three days.

My favorite potato topping is sloppy joe sauce. I make it with lean hamburger, at least as much onion as burger, and tomato sauce with seasoning packets or commercial sloppy joe sauce. It's about 1/3 meat and the rest vegetable. It makes a nice meal.

Honey is high fructose bee spit. It has the reputation for being healthy because it is "natural," but you might as well sweeten with high fructose corn syrup. It's death for diabetics because the fructose causes a blood sugar spike.

As for beans, I love them. If you need cheering up, here is a tune you can sing with the beans.
