Awesome project I know I am late to the show but just bought one of these at auction. Seems to run good. But the low oil pressure light is on, and oil level is good

Does the oilpressure light go out if you rev it up?
I would start with sticking a gauge on it and see what kind of pressure it's making.

If it has the 3 cylinder AD3 engine it's supposed to make 9-13PSI to turn off the light per the manual and the relief valve should open at 40PSI.:

The earlier 4 cylinder engines had a higher oil pressure (35-65PSI) with the relief valve opening at 50PSI:
