Regardless of the fixture you select, my only suggestions are:
a) use 5000K Cool White bulbs - These provide much better pure white lighting especially for any close work you may need to do in the future
b) Go with 4-bulb 4' fixtures mounted with only 4' spacing between fixtures
There's no such thing as 'too much light'. The operating cost is negible. I just replaced some old fixtures of 4' 40 watt bulbs with 4' 32 watt T-8 bulbs. The T8 bulbs are rated for 8 years, 3 hrs per day use, and give much better smooter lighting.
Your task is one that I personally would want to never need to do again. It's certainly no fun working overhead for such a task.
