Btw, y'all stop talking about mud bugs. I'm from N.O. and miss them really bad, especially now during peak season. We were planning on going down to Breaux Bridge, but work got in the way....{sigh}

Forty years ago, had to go to Louisiana to get them. Now the grocery stores here have them if you want to cook your own. You can buy the live ones, or just the peeled tails. And lots of restaurants serve them. I remember the first restaurant in Dallas to have boiled crawfish on the menu, so I tried them, and that's what they were; boiled, no salt or other flavoring or seasoning at all. And that place did not stay in business very long.

Of course different places now have slightly different recipes for their etouffee. I haven't found one that was not good, but Pappadeaux probably has the spiciest or most highly seasoned. And the batter for the fried ones are too hot for some folks, but I like them.

Back in post #7 of this thread, 3 days ago, I said, "I am going to discontinue the Cetirizine myself after tomorrow and see if I find that I still need it." Well, I did enough sneezing this morning to change my mind.:laughing:

I wonder if Pat's is still on the Bayou? Used to make it to Breaux Bridge at least every other year, for good food and fun. Miss those days.

I believe it was 1975, possibly 1976, when we went to visit friends in Baton Rouge, and we all drove down to Lafayette one day for an air show. Then on the way back, we stopped at "Pat's" right on the Atchafalaya. It was just a restaurant, and I had their super crawfish dinner; an 8 course meal with all 8 made from, or including, crawfish. I had heard that Pat's was not there anymore, but now I see that there's a Pat's Club in Henderson and I wonder if it's the same place. That super crawfish dinner would almost be worth driving to Louisiana for.:laughing:

I'm not sure I can remember all 8 courses, but there was crawfish cocktail, crawfish bisque, deviled crawfish, crawfish pie, fried crawfish, crawfish etouffee, crawfish salad, crawfish au gratin (I think).

The one I miss the most is Fitzgeralds over the water on Pontchartrain...spicy cajun boiled blue crabs until you could not take another bite. The table cloth was newspaper..........it's gone now but the memory's remain forever.

I miss those days too & once you have been there(BB) all other bugs are held to a higher standard. We used to buy them in the 50lb crocus sack & boil them in the Amite River after a day of float tubing....fantastic days but way way too long ago.

OP, sorry for the sidetrack. I guess allergies are the bad things in our blood....once crawfish get in there it's a much more pleasant outcome:thumbsup:

I too have been to Fitzgeralds, and enjoyed the crabs. Much better flavor than other locations. I also used to go crabbing, and then make fresh gumbo with the crabs I caught. Been a few years, since I was down that way. Now, unless one wants fake crab meat, snow crab legs are as close as you can get in the stores for gumbo. I just usually use shrimp and sausage, or chicken.

Watch out for the already peeled crawdads. Many are from Vietnam or China and the water they are raised in is horrible at best.
