I just hang them by one rear leg. That allows me to spin it around, which is easier then having to move myself into different positions to skill an animal. But I rarely skin them all the way unless I'm taking a deer to the meat processor. For hogs or goats, I just take the hams and backstraps. I don't even gut them, I just skin them enough to get what I'm wanting.
