Fine. Then write AS IS on the receipt, but I still want proof I did pay for it.
No way am I handing over thousands of $$ cash to some stranger, then him claiming I never paid for it.
I want proof if that sort of issue arises.

AND asked for similar documentation for tax purposes, because I realize that it is inappropriate to ask for a receipt in the underground economy. I'll simply wouldn't buy from you.
I've bought used many times. I expect some type of proof of payment. Never an issue with sellers I've dealt with.
I've sold used and most buyers expect the same. A title or a receipt.
If you like handing over thousands to a total stranger with 0 proof, be my guest.

It's just the way the game is played, here anyway. You try and find a deal, but loose any guarantee or documentation. I have bought and sold enough stuff, and generally speaking it's never a problem. Problem starts when the cheque book comes out.

Like I said though, I usually have no trouble making an invoice. All sales final, AS IS, higher price and Sales TAX.
