How do I tell if it's a high flow or not?

If you are using a hyd motor on the aux circuit, and you switch from low to high, the motor should speed up. If you are using a mulcher, it should speed up.

A flow meter would indicate the flow in GPM's.

The 257B I had did not have high flow. It had the 2 speed switch but no 2 speed. Maybe you have the same?
Awsome machine other than that untill you have to replace the undercarriage.
