Wild hog is fine, just don't consider it "pork". The fat will have strong flavor like deer fat. If you clean it right and treat it more like venison than pork it works out fine. Just like wild turkey the flavor and texture depends a lot on what they have been eating at the time.
Not around here! Gut it, burn off the fur/hair then stick it in a pit. 12-20 hrs later, best pulled pork ever

I had some clients that used to love hunting hogs. There was this 52 acre really dense place about 8 miles N of my ranch that was fenced in. Guys had stocked it w about 200 wild hogs. Open areas where cleared from stands to feeders...I remember trying to line up 2-3 pigs and waiting so I could take out multiple w one shot. The most I ever got were 3 med size pigs w my .3030 at about 40 yards...

We have that issue here with black bear depending if you get one in the spring or fall hunting season...
When I was growing up, the bears that tasted really nasty were the ones that hung out 'round the garbage pits (or ate out of dumpsters). Again, it really depends on what they eat. The only thig that the time of year changed was when you were getting a sow for lard. Big old sow before hibernation, render the fat - best lard you can use for pastries or anything else for that matter!

That always works, no argument from me.
In Texas, we will not consume wild hogs until it gets cooler/cold. This means we have 4-5 days of potential eating per year ;-(

Also, when the corn goes into the deer feeders, obviously hogs eat the corn too...a little marbling in the winter helps w the taste...right now w the current heat/drought in TX, this is putting the hurt on the hogs too...killing everything, including our agricultural economy..going thru round bales like there's no tomorrow...I would take a whole sounder of pigs on my place for an 8-10" rain...

We just finally starting getting some rain and the grass is coming back in. Still feeding hay but hope to slow down this week. I'm still hoping to get hay for the winter, I have a promise but with a second cutting looking slim it may not happen.

I would take a whole sounder of pigs on my place for an 8-10" rain...
Yup, we aren't doing much better. Looks like our second cut won't be 'til September! And hay, if you can find it, is through the roof.

Everybody round here is hurting. A neighbor up the street has a friend up in NE he bought 16T of corn silage from to supplement this winter. With the cost of fuel, he seriously considered just doing a major herd reduction.

Y'all aren't up round that nasty storm that blew through St Louis are ya? 15-20" of rain is fine, just not in 24-48hrs.

I'm just southwest of St Louis and we got none that.... Not that I really want that flash flooding up here. Been there done that. I do like 1 to 4 inches per week, if someone is taking orders....
